Promotion: Take a half-day taster course with the Tokyo College of Sushi & Washoku in London

Japanese food has achieved stunning growth in its global popularity in recent years , but much of what is offered outside Japan is lacking in authenticity and it has been difficult to train in traditional Japanese cuisine without traveling to Japan. This is all set to change with the opening of the Tokyo College of Sushi & Washoku in London, and we have a special offer for chefs looking to develop their sushi skills.

The Tokyo College of Sushi & Washoku , which opens in London next month, is the first culinary college in the UK to be solely dedicated to Japanese cuisine, offering authentic cooking methods and cultural practices. Supported by the Japanese government, this first UK outpost of the established college in Tokyo is setting out to dramatically improve the quality the training in traditional Japanese technique offered to chefs in the UK. It’s Japanese chef instructors who bring with them a wealth of experience in Japan, and in high-end Japanese restaurants worldwide.

The college will teach not only the specialist skills and knowledge involved in making sushi (the most well-known Japanese culinary export), but also washoku (traditional Japanese cooking). Washoku, which was recognised by UNESCO in 2013 as ‘intangible cultural heritage’, involves a set of principles which distinguish it as a culinary art form. Key is the emphasis on seasonality, with ingredients carefully selected to align with the natural bounty of each season.

As part of preparations for its September opening, the college is running a series of half-day trial classes.

These sessions are scheduled for:

  • Wednesday, 11 September (10 AM - 1 PM)

  • Saturday, 14 September (11 AM - 2 PM)

These half-day trial sessions are an excellent opportunity to dive into the practical aspects of the college’s curriculum. You'll get to experience first-hand the quality and depth of the tuition, interact directly with the expert instructors, and get a true sense of the immersive learning environment.
